Recipe: Watermelon Rice Crispy Treat

I had left over rice crispy cereal from making cookies & cream rice crispy treats and saw this super cute watermelon rice crispy treat on Pinterest. I posted this on my instagram and got a lot of compliments on them and wish that I was creative enough to think of the idea. Regardless, I think my turned out pretty well and a lot of people ask how I made it – so here’s how to make your own below.

Serves

  • 8 slices

Ingredients

  • 5 cups rice crispy cereal (split up into 2 cups and 3 cups)
  • 5 cups marshmallow (split up into 2 cups and 3 cups)
  • 3 tbsp butter (split up into 1 1/4 tbsp and 1 3/4 tbsp)
  • Red & green food gel/coloring
  • About 20 chocolate chips

Note and tips

  • This recipe fits about a 9 inch circle pan.
  • You can adjust the amount of cereal and marshmallow if you want it more or less crispy (more cereal) or sweet (more marshmallow).
  • For the food coloring, I like using food gels instead of food dye because the colors don’t get diluted as easily.
  • The food gels are really concentrated, so start with a small amount and build up to the color you want.
  • Line your baking sheet with wax paper so that your watermelon rice crispy doesn’t stick when you try to take it out.
  • The best way to wash the dishes coated with marshmallow is to wash it with super hot water and soap. It will not be easy to wash it with just soap and water or even soaking it.

Putting it together

Prep

  1. Line a baking pan with wax paper.

Making the rind (the green part)

  1. In a large microwavable bowl, melt 1 1/4 tbsp butter in 10 second increments until melted.
  2. Once the butter is melted, add 2 cups of marshmallows. Melt them in 10 second increments. Stir the mixture in between until the marshmallows are fully melted (it should take two or three 10 second increments).
  3. Take it out of the microwave and add the green food coloring and stir. Add a small amount to start and add more to get the color you want.
  4. Add in 2 cups of rice crispy cereal. Stir until everything is evenly coated.
  5. Use your spoon or spatula and spread the mixture on the edge of your baking pan to create a ring. It should be around 1 inch thick.

Making the watermelon (the red part)

  1. In a large microwavable bowl, melt 1 3/4 tbsp butter in 10 second increments until melted.
  2. Once the butter is melted, add 3 cups of marshmallows. Melt them in 10 second increments. Stir the mixture in between until the marshmallows are fully melted (it should take two or three 10 second increments).
  3. Take it out of the microwave and and add the red food coloring and stir. Add a small amount to start and add more to get the color you want.
  4. Add in 3 cups of rice crispy cereal. Stir until everything is evenly coated.
  5. Use your spoon or spatula and spread the mixture inside the green ring. Fill in the space.

Finishing it up

  1. Use something flat to press the cereal mixture down and make sure that the rice crispy mixture is even (I used the bottom of a measuring cup).
  2. Randomly place the chocolate chips point side down in the watermelon.
  3. Let it sit for at least 30 minutes.
  4. Once it’s set, take the wax paper with the rice crispy treat out of the baking pan and set it on a cutting board.
  5. Use a sharp knife to cut it into watermelon slices.

Verdict

It was a little sticky trying to place the rice crispy and marshmallow mixture into the baking pan, but after some patience, it turned out pretty well aesthetically. As cute as they look, I wish it actually tasted better. It wasn’t bad, but I think the food gel altered the flavor a little bit and it wasn’t as sweet as I usually like. The chocolate chips helped though and added a fun flavor to the cereal and marshmallow. The texture came out pretty decent (soft, but a little bit of a crisp), but it wasn’t as crispy as my cookies and cream rice crispy treats. Next time, I would probably add some more marshmallow to increase the sweetness.
